  4. Sandra - just as soon as I work out how to "vegan-ise" it, I think I just need to substitute something for the eggs?

    Angela - I've never made banana bread, I really should try. Baking here can be a nightmare as the self raising flour we use in the UK is so much better than stuff here. I have to convert all my recipes to plain flour and baking powder or use American recipes.

    Life Abroad - Thank you so much. I absolutely hear what you are saying about the micro/combi oven. We had one in our first apartment here, I couldn't work it out so I didn't bake for a year!

  5. Oh! Maybe it's the self raising flour that's making them so crappy, I will try doing the same and replace it with plain flour and use baking powder instead...
